Venison Meatloaf Recipe: Hunter’s Hearty Midwest Classic

From My Mother’s Kitchen to Our Hunting Freezer
Hunters Meatloaf came to be from my mother’s traditional loaf, which never had real measurements but was cooked in the true “cook with your heart” method.
Growing up in the Midwest, hearty family dinners that were both comforting and easy on the pocketbook were the norm. Meatloaf was always in regular rotation at our house. After many military PCS moves and years stationed in the South, we finally moved back to the Midwest. The much colder winters quickly changed what I craved. I no longer wanted summer kabobs on freezing evenings — instead, I reached for soul-warming meals like soups and classic comfort food.
That’s when I dug through my collection of handwritten recipe cards and found the first draft of my mom’s meatloaf recipe that I wrote down while I was in high school. It still makes me laugh to see her instructions: “about,” “around,” and “by consistency or taste.” (My mom grew up tasting raw beef, but I don’t recommend that for food safety!)
The second draft had more definite-ish measurements, but the card sat unused for years while we traveled. Then in 2025, we were finally back up North and able to hunt again. That season was extra special — my daughter got her first buck, and I harvested my first deer in over 20 years and it was a buck at that!
After that season we had four deer to process. One went to an amazing German Meat Shop that got turned into landjaeger and summer sausage. Two were butchered locally by a fabulous wild game processing shop where we got back steaks, roasts, and ground meat “chubs” with 70/30 fat ratios. And the last was processed by use to use for our own family recipe of jerky that my Mom created many decades ago. I’ve been sworn to secrecy over that one so you won’t see it here as she’s kind of a big deal and known in our hometown for this jerky (it really is the best Mom).
So we ended up with a freezer full of venison. That’s when it hit me: I should combine our lean venison with ground beef to create the perfect venison meatloaf.
Creating the Perfect Venison Meatloaf.
I wanted to honor both the venison we worked hard for and my mother’s original recipe. The solution? Combining lean ground venison with ground beef (we use 70/30 beef) to provide the ideal lean-to-fat ratio for a juicy, flavorful venison meatloaf.
The first time I served it, my kids — who hadn’t eaten meatloaf in years — were skeptical about “meat in loaf form” but they politely tried it…and instantly LOVED it!Now this venison meatloaf is a weekly staple in our house during the colder months. We love serving it with buttery green beans and what my kids call my “famous” Spaetzle.

Ingredients:
- 2Lbs. Ground Meat ( I like to use 1lb Ground Beef and 1lb Ground Venison that we have processed) (you can use all beef for a more traditional meatloaf)
- 1 package or sleeve of Saltines, crushed
- 1/2 cup Onion, chopped
- 1/3 cup BBQ Sauce
- 1/4 cup Mustard
- 1/4 cup Ketchup
- 2 eggs
- 1 tsp Garlic Salt
- 1/2 tsp Seasoning Salt
- 1/2 tsp Kosher Salt
- 1/4 tsp Black Pepper
Directions:
- Preheat oven to 350F.
- Mix all ingredients together completely before forming 2 “loafs” in a 9x13pan. You can also use individual bread pans.
- Drizzle BBQ Sauce over top of each loaf and cover with tin foil.
- Bake for 1 hour to 1 hour 20 mins. I find that my loafs are almost always done at exactly 1 hour but when this is made at my Mothers house its closer to 1 hr 15mins. Just make sure the center of the loaf reaches 160F.
- Remove from oven and slice, serve with your favorite topping of BBQ Sauce, Ketchup or even Mustard as my twins prefer.

- 1 package Saltine Crackers, crushed
- ½ cup Onion, chopped
- ⅓ cup BBQ Sauce
- ¼ cup Mustard
- ¼ cup Ketchup
- 2 Eggs
- 1 tsp Garlic Salt
- ½ tsp Seasoning Salt
- ½ tsp Kosher Salt
- ¼ tsp Black Pepper
Instructions
- Preheat oven to 350℉.
- Mix all ingredients together completely before forming 2 “loafs” in a 9x13pan. You can also use individual bread pans.
- Drizzle BBQ Sauce over top of each loaf and cover with tin foil.
- Bake for 1 hour to 1 hour 20 minutes until the center of the loaf reaches 160F.
- Remove from oven and slice. Serve with your favorite topping of BBQ Sauce, Ketchup or Mustard.
