This recipe was given to me by a dear friend many years ago. Spaetzle is a German type of pasta made with eggs and flour. It is normally served along side dishes such as Sauerbraten, Currywurst, or Schnitzel. Spaetzle is rather quick and easy to make but I do highly suggest you purchase a Spaetzle maker to make it much faster. I had in the very beginning made this with a flat cheese grater but it became quite messy and took a lot longer than needed (you really need the Spaetzle maker.). I hope you love this recipe as much as my family does.

Ingredients:

  • 8 cups of water, salted
  • 1 cup All Purpose Flour
  • 1/2 tsp Nutmeg
  • 1/2 tsp Salt
  • 1/2 tsp White Pepper
  • 1/4 cup Milk
  • 2 Eggs, beaten
  • 2 Tbsp Butter
  • 1 tsp Parsley Flakes

Directions:

Start by boiling your water in a large pot.

While your water is boiling, mix the flour, nutmeg, salt and pepper together. Add in the eggs and milk, alternating until the batter becomes smooth. You can sprinkle in the parsley flakes now and mix them in or wait until the end and sprinkle on top before serving. I like to personally mix them in.

Using your Spaetzle Maker, drop the dough into the top and slide back and forth over the boiling salted water. As they drop into the water they go to the bottom and then rise back to the top as they cook. Continue to cook the Spaetzle in the boiling water 5-8 mins until all have risen to the top.

Strain the Spaetzle with a colander and set aside. Melt 2 Tbs of butter in a non-stick pan until sizzling, then add your Spaetzle in batches and brown.

Notes:

For a low fat alternative you can cook the Spaetzle in boiling broth rather than water and omit the sautéing step.

You can also try adding different flavors to the batter; small amount of minced garlic or shallots. You can also try sautéing in bacon fat instead of the butter.
