Red Rice casserole is a recipe that I grew up with and is perfect for the middle of the week when your day has gotten away from you and now you have hungry kids asking what’s for dinner. Huge bonus its quick, easy and budget friendly.

Ingredients:
- 1 16oz. package of Bacon ( can use turkey bacon)
- 2 cups Rice
- 2 cans of condensed Tomato soup
- salt and pepper to taste
Directions:
Start by rising your 2 cups rice. This is very important that you rinse your rice until the water is clear and the starch has been removed. then proceed to cook your rice and set aside. While your rice is cooking cut your package of bacon into strips and cook in skillet.


Drain off the grease from the bacon and blot with a paper towel. Return to the skillet and pour in the condensed soup cans. Stir on medium low heat until heated through. Once the rice is cooked drain off any remaining water. Mix in a large bowl the rice and tomato bacon mixture and season with salt and pepper.

There you have it quick, easy and budget friendly kid approved Red Rice casserole without fuss!
