Wilted lettuce was a side dish that I grew up with having monthly, except it didn’t have feta or red onion. As I got older I added in red onion and feta cheese one night on a whim and boy was that a game changer.
This wilted lettuce recipe is extremely fast and bursting with sweet and savory flavors making it absolutely perfect.
Now when I say this wilted lettuce is the perfect side I mean it! It pairs with chicken, steak, roast, pork chops, fish (as I have been told) and even left over Thanksgiving turkey. And it smells oh so good too (like I said PERFECT!)
Ingredients:
- 1 head of green or red leaf lettuce
- 1 lb cooked bacon (save grease as part of recipe below)
- 1/2 cup white vinegar
- 2 Tbsp sugar
- 4 oz Feta crumbs
- 1/2 red onion, sliced thin

Directions:
Rip up the leaf lettuce by hand and place into a large bowl. Set aside.
Brown the bacon in a pan (I like a cast iron pan the best). Remove and set aside to let cool, leaving the grease in the pan.
Next, add into the bacon grease the vinegar and sugar. Heat until the sugar dissolves (this will have a very sweet smell) but do not boil.
Pour the hot liquid over the ripped up leaf lettuce into a large bowl and stir. This will cause the lettuce to wilt.
Finally, crumble up your bacon and add to the lettuce. Give it a good stir and then top with feta cheese and red onion. Toss one more time to combine and serve.
