Wedge Salad…. If you have clicked on this recipe then I am most certain that you have probably had an amazing wedge salad in a restaurant and are looking to recreate such a delicious and simple lower carb meal at home. That is exactly how we came up with our recipe.

Nathan and I have always been fans of a good salad but whenever given the chance we will order a wedge. Nathan and I both love more than anything a meal that is incredibly fast, easy and one that we don’t feel guilty about after eating… or have to put on those stretchy pants…. ok, that’s only me but still you know what I’m saying. Now don’t get me wrong we thoroughly enjoy a decadent meal from time to time but as an every day thing that’s just never been us.

This wedge salad with it’s creamy buttermilk dressing, blue cheese, and BACON is so filling that I’d highly suggest that if you’re wanting to use it as a salad before your dinner, that you cut the lettuce into fourths instead of in half. We personally like to use this as our entire indulgent yet guilt free dinner.

Ingredients:

  • 1 cup Mayonnaise
  • 1/2 cup Sour Cream
  • 1/4 cup Buttermilk
  • 1 Tbsp fresh Lemon Juice
  • 1 1/2 tsp Garlic Powder
  • 1 1/4 tsp Onion Powder
  • 1 tsp fresh Ground Pepper
  • 1 tsp Sea Salt
  • 10 oz. Blue Cheese Crumble (Feta can be substituted)
  • 1/4 cup Sesame Seeds
  • 8 oz. thick cut bacon, cut into small strips
  • 1 pint Cherry Tomatoes, halved
  • head of Iceberg Lettuce, cored and halved
  • 1/4 cup Green Onion, diced

Directions:

Mix all ingredients from Mayonnaise through Sea Salt and set aside. Cut, cook, and drain off bacon. Core and cut the Iceberg lettuce head in half. Pour on the dressing and sprinkle the halves with your prepared toppings. Enjoy!
