HMMM… Black Beans and Hummus? Yes PLEASE!

I love a healthy snack that I my kids truly enjoy and think it’s a special treat. This happens to be one of those recipes. Black Bean Hummus is a new twist on the traditional Middle Eastern dish. It has a delightfully surprising kick to it without sounding all 5 alarms. To put it in prospective: all my kids enjoy this… even the toddler.

This is a great appetizer to have out during gatherings, not only to get some extra veggies in those kiddos but also is a great dish for anyone who’s a vegetarian.

NOTES: If you are afraid that it will be too spicy try cutting back to 1/2 the Jalapeño and only 1/8 tsp of Crushed Red Pepper and Ground Red Pepper.

Ingredients:

  • 1 (15oz) Black Beans, rinsed and drained
  • 1 Garlic Clove, peeled (or 1 tsp minced)
  • 2 Tbsp Lemon juice
  • 1 Tbsp Tahini
  • 1 tsp Ground Cumin
  • 1/4 tsp Salt
  • 1 small Jalapeño, de-seeded
  • 1/4 tsp Crushed Red Pepper
  • 2 tsp Olive oil
  • 1/4 tsp Ground Red Pepper

Directions:

Place all Ingredients in a food processor or high powered blender like a Vitamix. I know I have wrote about my Vitamix Blender in so many of my previous post but seriously this thing is AMAZING! If you can swing it, definitely treat yourself to one of these game changing machines. I have made smoothies in it for breakfast and for lunch turned around and made soup… yep I said soup! It heats it up and everything #SoCool. I mean for a mama of 4 this thing has saved me so many extra dishes I’ve lost count.

Serve with your favorite vegetables, pita bread or chips.
