If you’ve ever shown up to a backyard BBQ and watched one dish disappear faster than everything else on the table, you know exactly what this loaded baked potato salad moment feels like. That dish, for us, is this recipe — and it’s been that way ever since a dear friend first brought it to one of our Alabama get-togethers.

When we were stationed back in Alabama for the second time, we were lucky enough to be surrounded by so many friends from college and flight school. After years of being scattered across the country, we grabbed every chance we could to get the whole crew — and our whole brood of kids — together as often as possible. BBQ is serious business in the South, and especially in Alabama, and this loaded potato salad showed up at nearly every gathering. It was love at first bite. The combination of roasted Yukon gold potatoes, butter, sour cream, crispy bacon, sharp cheddar, and green onions hits every single note of a perfect loaded baked potato — just in salad form.

This recipe takes a different approach — roasting the Yukon golds in olive oil, salt, and pepper until they’re fork tender and just slightly golden on the edges. That extra step makes all the difference. Roasted potatoes have more depth of flavor, hold their shape better in the salad, and give you slightly crispy edges that contrast beautifully with the creamy butter and sour cream coating. It’s what elevates this from a standard BBQ potato salad into something truly special.

  • 3 lbs Yukon Gold potatoes, cut into ½-inch chunks
  • 1 stick butter, melted
  • 1 cup sour cream
  • 1½ cups shredded cheddar cheese
  • 1 lb bacon, cooked and chopped
  • 4 tbsp extra virgin olive oil
  • 1 tbsp salt
  • 1 tsp black pepper
  • ½ cup green onions, chopped
  • Optional: 1 tsp cayenne pepper (for a little Southern kick!)

Why Yukon Gold? Yukon Gold potatoes are the ideal choice here — they have a naturally buttery, creamy texture that holds up beautifully to roasting and blends perfectly with the rich loaded potato toppings. Russets work too but tend to get a bit fluffier and may break down more.


How to Make Loaded Baked Potato Salad

Step 1 — Roast the Potatoes Preheat your oven to 350°F. Cut the potatoes into ½-inch chunks and toss with olive oil, salt, and pepper until evenly coated. Spread in a single layer on a baking sheet and roast for 30–35 minutes, or until fork tender.

Step 2 — Let Them Cool Allow the roasted potatoes to cool for about 10 minutes. This step is important — adding the sour cream mixture to piping hot potatoes can cause it to break and get greasy rather than staying creamy and luscious.

Step 3 — Mix the Loaded Potato Dressing While the potatoes cool, combine the melted butter, sour cream, chopped bacon, green onions, shredded cheddar, and cayenne pepper (if using) in a large bowl. Stir until everything is well mixed.

Step 4 — Toss and Serve Add the cooled roasted potatoes to the butter and sour cream mixture and toss gently until every piece is fully coated. Taste and adjust seasoning if needed.
