Feta Chicken: Easy, Healthy, Delicious

Our Feta Chicken tastes like one of those meals you pick up from the “fancy” restaurant on the way home after a full and very busy day. Thankfully, even after a busy day, this feta chicken dish is very easy to whip up quickly and is always a hit. You can have the whole thing done and on the table in an hour and a half.

This is also a recipe, where if you take the additional time and brine the chicken beforehand, oh my gosh, this feta chicken becomes so tender and flavorful, you’ll wonder how you had chicken any other way. Brining only takes 30-40 minuets, so if you have the time to spare and you’ve never brined chicken before, think of this feta chicken as your “gateway recipe” to super tender and juicy poultry and give it a shot.

But to be totally honest, I’ve skipped the brining on nights when I needed dinner to hit the table in an hour and a half. Good news is, this feta chicken dish is so good, it can stand alone with out the extra work. Trust me.

Our Feta Chicken pairs perfectly with Dill Potatoes and some freshly made No Knead Bread. Forewarning: your family will be asking you to make this a monthly staple in your meal rotation. Thank goodness it’s a snap to make.

Ingredients

  • 1 bunch of fresh spinach (or a small bag)
  • Roma tomatoes (enough to cover the bottom of the pan ( at least 3)
  • 1 small container of Feta cheese
  • Fresh Lemon
  • Chicken breasts, 2 lbs
  • 1/2 cup butter
  • 1 TBSP minced garlic
  • bread crumbs or panko chips for breading

Directions

Brining instructions: Dissolve 1/4 cup of kosher salt in 1 cup of cold water. Add chicken breasts, then add enough water to cover all the chicken. Place in refrigerator for 30-40 minutes.

Spread the fresh spinach into the bottom of a greased 9×13 pan.

Next, top the spinach with sliced Roma tomatoes, then feta cheese.

Squeeze 1/2 of a fresh lemon over top of the spinach, tomato, feta.

Rinse and pat dry chicken breasts, set aside.

Melt butter in the skillet with the minced garlic. Be sure not to burn the garlic or brown the butter. Remove from heat and coat each Chicken breast with garlic mixture then into bread crumbs or panko chips. Then lay the prepared chicken breast on top of the layered vegetables and feta cheese in the 9×13 pan.

Squeeze the remaining 1/2 of the lemon over top along with any remaining garlic butter mixture.

Cover pan with aluminum foil.

Bake for 1 hour at 350,

After the first 30 minutes have passed, remove the aluminum foil and bake the last 30 minutes uncovered.

Once the time is up, check chicken for doneness and then let the feta chicken rest for five minutes before serving.
