Our favorite types of recipes are ones that rely on simple ingredients supported by an easy but specific technique, yielding something incredible at the end.

And for this amazing mac and cheese, the specific technique is: dump it all in an instant pot and turn it on.

No boiling water on the stove. No draining pasta. No complicated steps (“fold in the cheese, David”). Just a quick stir and in about 20 minutes you’ll have the creamiest, cheesiest mac and cheese. It’s the ultimate low-effort, high-reward recipe that shines at casual cookouts, potlucks, game days, and family dinners.

We’ve tweaked this one so you don’t have too. The pressure cooker will cook the pasta perfectly al dente every time, while the evaporated milk and blend of sharp cheddar, monterey jack, and parmesan create that signature silky, restaurant-quality texture.

Ingredients (Serves 6-8 as a side)

  • 16oz (1lb) Dry Pasta (elbow macaroni is classic; shells or cavatappi also work great. We used rotini for this one!)
  • 3 Tbsp Butter
  • 1 tsp Dry Mustard
  • 1/2 tsp Garlic Salt
  • 1/2 tsp Salt
  • 4 cups Water
  • 5oz Evaporated Milk (one small can)
  • 3 Cups Cheddar Cheese, freshly shredded
  • 1 cup Montery Jack Cheese, freshly shredded
  • 1/4 cup Parmesan, freshly shredded

Creaminess Tip: Shred your own cheese from a block. Pre-shredded cheese contains anti-caking agents that can make the sauce grainy.

Directions:

  1. Add the dry pasta, butter, dry mustard, garlic salt, salt, and water to your Instant Pot inner pot. Stir gently so most of the pasta is submerged.
  2. Secure the lid, set the valve to sealing, and cook on Manual/High Pressure for 4 minutes.
  3. When the timer goes off, carefully perform at Quick Release (stand back from the steam!)
  4. Open the lid and switch to Keep Warm (most models do this automatically)
  5. Pour in all of the evaporated milk. Add half of the cheddar, and half of the monterey jack, (and half or all of the parmesan). Stir vigorously until the cheese is completely melted and the sauce is smooth.
  6. Add the remaining shredded cheese and stir until fully melted and creamy. The sauce will look a little loose at first – that’s perfect.
  7. Remove from all heat and let stand for 5 minutes — this is the secret! The sauce thickens up beautifully as it rests. Serve directly from the pot.
  8. Give it one final stir, taste, and add a pinch more of salt if needed. Serve hot!
