I have always been a huge fan of stews, soups and chilis. It may be due to growing up in Wisconsin and most of the year can be considered “soup weather”

Beef and Sweet Potato Goulash is a perfect blend of savory spices, hearty texture and hint of that delightful sweet potato. This will warm your soul and instantly feel like you’re enjoying that perfect autumn sweater day no matter what time of year it is.

ingredients for beef and sweet potato goulash

Ingredients:

  • 2- 2.5 lbs Stewing Beef about 1” chunks
  • 1.5 lbs Sweet Potatoes peeled and chunked
  • 4 large Carrots ,peeled and chunked
  • 2 Green Bell Peppers, large chunks
  • 2 Yellow Onions, thinly sliced
  • 3 Tomatoes, chunked or 1 can of diced Tomatoes
  • 2 cups Beef Broth
  • 6oz can Tomato Paste
  • 3 Tbsp Sweet Hungarian Paprika
  • 3 Tsp minced Garlic
  • 1/2 tsp Caraway Seeds
  • 2 tsp Parsley
  • 1 .5 Tbsp Salt
  • 2 tsp Black Pepper
  • 2 Bay Leaves

Directions:

Place your chunked Stewing Beef in the bottom of your crockpot and pour the rest of the ingredient on top.

Cook on low for 8 hours or High 4 hours. This Beef and Sweet Potato Goulash pairs perfectly with our No Knead Bread.
