Hash Brown Casserole: The Cracker Barrel Copycat That Owns Brunch

Hash Brown Casserole is a family favorite for any lazy weekend breakfast or brunch — creamy, cheesy, savory, and comforting in exactly the way a great potato dish should be. One of my favorite things about it is that it reheats perfectly the next day, if there is even any left over. We make this every Christmas morning as part of our full holiday breakfast spread, right alongside Monkey Bread, French Toast Casserole, Biscuits and Gravy, fresh pour-over coffee or Moka Pot, and of course — mimosas. It is the kind of morning our family looks forward to all year long.

Everything goes into one pan, the oven does the work, and what comes out is golden brown on top and creamy all the way through. It is exactly what a crowd-feeding casserole should be: minimal effort, maximum comfort.

How to Make Hash Brown Casserole

Step 1: Preheat your oven to 350°F.

Step 2: Spray a 9×13 baking dish with cooking spray and set aside.

Step 3: In a large bowl, combine the thawed hashbrowns, melted butter, cream of chicken soup, sour cream, chopped onion, shredded cheddar, salt, and pepper. Mix thoroughly until everything is evenly combined.

Step 4: Pour the mixture into your prepared 9×13 pan and spread evenly.

Step 5: Bake for 45 minutes until cooked all the way through and the top starts to brown and bubble at the edges.

Thaw your hash browns fully before mixing. This is the most important prep step. Frozen hash browns mixed into the casserole cold will release excess water as they thaw during baking, making the casserole watery rather than creamy. Thaw them in the refrigerator overnight or spread them on a baking sheet at room temperature for an hour before assembling.

Use freshly shredded cheddar when you can. Pre-shredded cheese is coated with anti-caking agents that can make it melt less smoothly. Shredding your own cheddar from a block gives you a creamier, meltier result. Sharp or extra-sharp cheddar gives the most flavor.

Make it the night before. Assemble the entire casserole, cover tightly with plastic wrap or foil, and refrigerate overnight. Pull it from the refrigerator while the oven preheats and bake as directed, adding about 5–10 extra minutes since it is starting cold.
