Wilted Lettuce

This side dish is extremely fast and bursting with sweet and savory flavors making it absolutely perfect.


  • 1 head leaf lettuce (ripped)
  • 1 lb bacon (cooked, crumbled and save grease as part of the recipe )
  • ½ cup white vinegar
  • 2 Tbsp sugar
  • 4 oz feta crumbles
  • ½ red onion (sliced thin)


  1. Rip up the leaf lettuce by hand and place into a large bowl. Set aside.
  2. Brown the bacon in a pan (I like a cast iron pan the best). Remove and set aside to let cool, leaving the grease in the pan.
  3. Next, add into the bacon grease the vinegar and sugar. Heat until the sugar dissolves (this will have a very sweet smell) but do not boil.
  4. Pour the hot liquid over the ripped up leaf lettuce into a large bowl and stir. This will cause the lettuce to wilt.
  5. Finally, crumble up your bacon and add to the lettuce. Give it a good stir and then top with feta cheese and red onion. Toss one more time to combine and serve.
